Beef and Cabbage Soup

So I know this may not sound very good - but it is!  Best of all, it is a crock pot dish and easy to make in the morning and have ready after getting home from those afternoon activities:) Here's the recipe:

1 lb. ground beef
1 can kidney beans (drained)
1 lg. can of diced tomatoes (40 oz)
Onion (1/4 -1/2 cup) chopped
Celery (1/2 cup) chopped
Chili powder (about a TB)
2 cups (or a little more if you want it more soupy) of water
1 head of cabbage (either green or red) - thinly sliced
salt and pepper
*garlic (if you want it)

Brown ground beef with onions and celery and garlic if you use it.  Add the beef and all other ingredients (EXCEPT cabbage) to crock pot and cook on low for about 3 hours.  Add cabbage and cook until ready to eat (you could cook for an hour on high OR just throw it in and leave it on low for longer).  Serve with a warm slice of bread (I made soda bread tonight).  *This dish freezes well too:)
