Green Chile Chicken Enchilada Casserole

This is kind of a staple in these parts - many different ways to prepare.  Here is today's version (I made it yesterday and stuck in the fridge so all I had to do tonight was pop it in the oven):

Green Chile Chicken Enchilada Casserole

Rotisserie Chicken (I like Costco) - shred and put in a pot

Cream of Chicken soup - add to pot

Some spices - cumin, cayenne pepper, salt/pepper, oregano (or whatever else you feel like throwing in) also add to pot

Salsa - however much you want/whatever spice level you want... throw in pot.

Green Chiles - couldn't have a New Mexican staple without these!

 Sour cream - I think I had some that needed to be used so I threw that in too!

*Heat above until warm

 Next spread some green chile enchilada sauce on bottom of 9x13 pan, layer some tortillas (I used a light corn/wheat version), spread half of chicken mixture, sprinkle with cheese (I used Mexican), layer more tortillas, more enchilada sauce, more chicken, more cheese.  Finish with cheese layer.  Cover and bake at 350-375 degrees for about 30-45 minutes.  Remove foil for last 10 minutes of cooking to allow cheese to melt to your liking.  Serve with fresh cilantro and sour cream (or Greek yogurt - which is what we used tonight).  Mmmmmm!                    

The Lonely Cow!

Some of you got the cow email, for those that didn't... We had excitement in the farm field this week as a baby cow was born while we were walking Gifford!  Super sweet, I worried about coyotes getting the sweet babe the first night as momma cow didn't seem too "motherly" and sort of abandoned the poor thing longer than I thought she should have (we all spent some hours surfing the web about "normal" calf/momma behavior).  But, all was well and it is up and grazing the field on day 3.  Sadly, the other calves are bullies! Poor little thing is all alone and when it catches up with the bully cows they kick it away! Here is the baby (about 10 minutes old) and "The Lonely Cow"!  Thinking of kidnapping it and bringing it into our yard for a playmate for Gifford (just kidding).

  

No more bulk emails!

Apparently my daughter thinks I need something to do besides cooking, cleaning, schooling, driving to activities, and playing silly games on my iPad! And since I am no longer running a homeschool group, I probably have a little extra time on my hands.  A Life of Enchantment - I live one and I live in the Land of Enchantment - get it?  Really, I love my life especially given our recent move to the southwest.  I would love to keep you all informed of our fun happenings and admittedly it is difficult to remember who really needs/cares/wants to be put on the group email list - and I am still resisting facebook - hence, the BLOG!   So, follow it if you wish.  I will put up some of our stories/adventures, recipes, photos etc... I will welcome the comments if you care to post.  I really do love and cherish my family and friendships -  especially with all of our moving around.  Thanks for reading - enjoy!
